LENTIL AND BACON SOUP





Just what we need on a cold day Stewie and it makes you eat veg :)


Ingredients as above 

  1. fry off bacon uses 4 rashers for a big pot
  2. then just add all the rest of the veg and top up with water remember the lentils will expand
  3. I also usually add a Knor and yes Stewie it has to be Knor ham cube
  4. cook for about 2 hours

HOMEMADE CHICKEN KIEV


INGREDIENTS

  1. chicken breasts
  2. breadcrumbs 
  3. egg
  4. flour
  5. garlic puree or garlic
  6. parsley
  7. parmigiana cheese

You can buy these Stewie but none come near to this healthy option (well the butter is not healthy but hey ho)
BUTTER FIRST

then you need to cut a hole in the chicken breast
Mix together butter garlic parsley then  roll in to a long thin sausage keep it thin so it will fit into the hole you will cut roll in tinfoil and put in the freezer

this is a picture of you doing it do you remember dad told you you would have salmonella now 
the secret is to make as small a hole as possible at the top and use the scissors to make a pocket inside DONT cut through the skin
I know this looks painful but the chicken is long dead push the frozen butter into the cavity you have made

now flour egg and breadcrumb
and yes I have van dyked the tomatoes to make it look poncy

now place in  a preheated oven 210oc for 25 mins 5 mins before end sprinkle a wee bit of parmigiana if you 
have it
you could deep fry of course to make it even better
serve with potatoes and salad oh I forgot you dont do salad :)

GRANNY WARD'S CHEESE PASTIES

Stewart you know you dad gets very nostalgic about these we will never make them as good as his mum!
INGREDIENTS

  1. Potato
  2. butter
  3. cheese
  4. egg 
  5. Ruskoline bread crumbs cant be fresh 

Method

  • boil potatoes and mash with butter `and seasoning
  • add grated cheese
  • shape in to shape as picture above 
  • dip in egg then breadcrumbs
  • grill till golden



wee tip Stewie put in the fridge to set for a wee while and keep the mash as firm as you can so they keep their shape

COTTAGE PIE





Good home comfort cooking your dad makes a good one too but its not as pretty as mine


  1. Pkt mince 
  2. 2 onion
  3. 2carrot
  4. water
  5. gravy granules
  6. garlic
  7. pototoes
METHOD

  • fry off mince
  • add onions and carrots and garlic
  • cover with water
  • cook for 30 mins then thicken with granules if needed
  • you can also add a dash of Worcestershire sauce as well
  • pour into dish to set
top with mash potato and grated cheese and cook in 200 dgr for arounf 30 mins

CHICKEN AND RICE SOUP

Stewie I will have taught you how to cook a chicken as from a chicken you can get a lunch and maybe 2 dinners .. yes you can
Right your chicken is cooked take all the meat of the bones and put carcass into a pot  with some veg cover with boiling water and simmer for an hour
Drain stock into a jug NOT INTO THE SINK

fry off above ingredients apart from rice
add stock back in
season and simmer for 35 mins
add in washed rice and simmer for 20 mins add in some cooked chicken and fresh parsley

LAMB MEATBALLS WITH CHILLI SAUCE


INGREDIENTS


  1. PKT lamb mince
  2. 1 egg
  3. 2tsp garlic purée
  4. 2 slice bread into bread crumbs
  5. chilli to taste 
  6. chopped mint and parsley
mix all together by hand and shape into balls


Stewart put these in the fridge for a while to firm up

THE SAUCE is so easy 
  • carton of passata
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chilli
  • table spoon mint sauce
  • squeeze of honey
  • some garlic purée
  • small glass of wine
simmer together for about 20mins

grill the meatballs for 10mins then place in sauce to finish cooking

serve with pasta or rice and some parmigiana and PARSLEY SPRINKLES

HOMEMADE LASAGNE

Remember Stewie when dad was raving about a shop bought one he asked you what you thought then you made my day if not my life by telling him you preferred mine , I Love my boy






Stewie above are the basic ingredients for Lasagne apart from the mince and pasta sheets!, I cook the carrots in a little bit of stock cube in the microwave first, so


  1. fry off the mince dont add oil you dont need it then throw in your other ingredients chopped onions mushrooms celery garlic puree honey parsley red wine and passata or tinned toms mixed herbs good teaspoon full
  2. add salt and pepper and cook for half an hour
whilst this is bubbling away make a white sauce you can do this in the microwave as well
  1. melt 1 and a half oz of butter then add 2oz flour till you get this consistency
  2. then add a mixture of water and milk up to 500mls
  3. put back in microwave and cook for 2mins
  4. bring out and stir add some English mustard 1/4 tea sp, dash white wine, 2oz cheese and sir vigorously
  5. it will on come together I promise put back in and cook on simmer for 3mins add more liquid if too thick
or Stewart you could use this as a cheats topping ... well if Delia can do it so can your mum sometimes
right so you have all the components so get your dish and put some of the bolognaise mix on the bottom and layer with lasagne sheets put a little of the white sauce in-between as well when finished top with white sauce

top with cheese and some mixes herbs and place in the oven till pasta has cooked and brown and bubbling about 30-40mins

take out and lastly most important... you know what it is .....PARSLEY SPRINKLE XX
