Self Saucing Lemon Pudding

this was not actually one of your favourites as I quote you said"lemon is technically a fruit mum" and all who know you will understand this but it is so easy to make that I though I would include it, you did eat it all up by the way :)
INGREDIENTS



  • 50g butter
  • 200g caster sugar
  • lemon , zested
  • 100ml lemon juice (include the zest from the zested lemon)
  • eggs , separated
  • 50g plain flour , sifted
  • 250ml milk
  • icing sugar for dusting
METHOD

  1. Heat the oven to 180C/fan 160/gas gas 4. Whizz the butter, sugar and lemon zest until they are pale and creamy in a food processor. Add the lemon juice, egg yolks, flour and milk one by one until you have a smooth batter. Whisk the egg whites until firm but not stiff, and fold the two mixtures together.
  2. Pour into a buttered ovenproof soufflé or baking dish and put it in a baking tray half filled with hot water. Bake for 4O-45 minutes until the top is lightly browned and set and there is a sort of gooey lemon curd below. Remove the dish from the tray, dust with icing sugar and serve hot, with or without cream.Good cold too

PORK AND LEEK MEATBALLS IN CIDER MUSHROOM SAUCE


so money is tight your fed up with beef mince and tomato based sauce this is perfect
Ingredients for MEATBALLS

PKT PORK MINCE
1 COOKED LEEK
PARSLEY
1 0Z PARMIGIANA
2 SLICE BREAD MADE INTO CRUMBS
1 EGG
TABLE SPOON CRANBERRY SAUCE

Mix together and form into balls put in fridge to chill and firm up

Ingredients for sauce


glass of cider
3/4 tub crepe fraiche
some leek
2 garlic cloves
teaspoon grain mustard
8 mushroom


  • fry of mushrooms leek garlic in a little oil or butter
  • add creme fraiche and mustard
  • add some water or stock to loosen
  • then boil till thickens
  • finish with parsley
grill meatballs for 10 to 15 mins then add to sauce


cook gently for another 10 mins

serve with pasta some more parmigiana and a parsley sprinkle

PENKILIN PIES





You and your dad challenged  me to make a pie like the famous Pukka pies, you both gave me a ten out of ten for this. so in honour of the river we live on they are to be known as Penkilin Pies


1st marinate the meat in red wine


then drain off marinade into a glass and place meat in a bag with seasoned flour

Fry off meat and add other ingredients then top up with water till covers about an inch above meat it will look like too much water but dont worry it will reduce
cook slowly for at least 2 hours





roll out pastry and line moulds


 then add filling which has been cooled down this is important dont add hot filling then put pastry on top make sure you seal the edges together well use egg then brush pie with egg to make it look pretty once its cooked 

cook in oven for about 20 to 25 mins at 210
then take out of moulds no parsley garnish needed

EASY PEASY CHEESECAKE

Do students do sweets well if they did it would be this one Stewie remember I made this one as a celebration of me losing a stone I force fed you huge slices so I would not each too much but I don't remember you objecting 




INGREDIENTS 

125gms digestive biscuits (I used sainsbury budget choc ones)
50 gms butter
300 gms of cream cheese
140mls double cream
half pkt of crushed Maltesers
25 gms icing sugar 

TOPPING
Maltesers
White chocolate (Used sainsbury budget)
toffee chocolate sauce if you have it

METHOD
  1. Make the base: Butter and line a serving dish with baking parchment if you have it. Put the biscuits in a plastic food bag and crush to crumbs using a rolling pin OR put into food processer. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hr to set firmly.
  2. Make the filling: Place the soft cheese, icing sugar  in a bowl, then beat with an electric mixer until smooth. Tip in the cream and continue beating until the mixture is completely combined. add in crushed sweets and fold through,Now spoon the cream mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down. put in fridge to chill



Then its time for the fun decorate , I placed Maltesers around and melted some white chocolate which I then made shapes on to oiled tin foil which I chilled and pealed off

Then drizzle toffee and chocolate sauce across  feel free to add some strawberries if you have got over your fruit phobia :)

Follow the recipe above and dont add malteasers 

  • press the biscuit base into individual silicon baking cases
  • with the basic cheesecake mix add what flavouring you want the ones below have chopped up fudge in some and white chocolate in the other, also you can add chopped fruit , you can do all at one time just decant some of the basic mix into a smaller bowl
  • put mixture on top of hardened base and chill till set
  • then decorate some ideas below

SUPER QUICK CHICKEN CURRY

So Stewie you want a curry in a hurry this is the perfect recipe no fancy pancy roux to make just throw it all in the pot
INGREDIENTS
1 SMALL ONION CHOPPED
1 SMALL CHILLI CHOPPED
4 CLOVES GARLIC
SMALL PIECE OF GINGER
TABLE SPOON CURRY POWDER
CHICKEN  YOU CHOOSE BREAST / THIGH /LEFTOVER
TOMATO SAUCE
PARSLEY
CRÈME FRECHE
STOCK /WATER

METHOD


  • SO FRY OFF ONIONS GARLIC GINGER CHILLI IN A LITTLE OIL 
  • ADD CURRY POWDER KEEP STIRRING 
  • THEN ADD TOMATO SAUCE AND CRÈME FRECHE
  • ADD THE SAME AGAIN OF WATER OR STOCK
  • IT WILL BE QUITE LIQUID DONT WORRY IT WILL THICKEN
  • ADD CHICKEN  IF USING RAW AND COOK FOR ABOUT 15 MINS TILL THICKENED


At this point you can add in more onion but as you dont really like chunky onions and its you cooking , well dont bother , top with more chilli and serve with rice dont forget to present it nicely with parsley sprinkles or even coriander

HOMEMADE PIZZA BURGERS

You love Pizza Stewart so how about a pizza style burger

INGREDIENTS

  1. 4 mushrooms & 1/2 onion chopped very finely and cooked off (let cool down too)
  2. 2 peppers from a jar chopped
  3. parmigiana grated 
  4. chopped chilli depending on how spicy you like it
  5. bread crumbs to bind 1 slice
  6. parsley
  7. mince 12oz will make 4 burgers
  8. peperoni
  9. cheese
  10. rolls

mix together as with normal burgers and shape into patties put into fridge to set 
put in the grill and cook on both sides 5 mins each side aprox
then top with cheese and pepperoni and grill till melty
place in a warm roll ,ciabbata is good for this

Vegetarian Lasagne


 Stewie picture the scenario you meet a girl you want to impress with your cooking then she says...... she is VEGETARIAN! oh no I here you cry but if you really like her you will want to impress so you need this in your repertoire 

INGREDIENTS  


  1. half red / green / yellow pepper
  2. 8 mushrooms
  3. 1 courgette
  4. 1 onion
  5. 1 carrot
  6. 4 cloves garlic
  7. pasata
  8. mixed herbs tea spoon
  9. seasoning
  10. small glass wine
  11. olive oil
  12. cheese
  13. white sauce
  14. lasagne sheets
you can vary the veg depending on budget buy peppers when on special offer

  • so dice all the veg and then sauté to soften the veg 
  • add pasata and wine it should be quite liquid but thats ok
  • boil till all the liquid has evaporated
  • this will take about 30 mins remember to season 




Make a white sauce as with Ordinary lasagne (look Back to recipe)

now do the usual layer of sauce layer of lasagne 3 to 4 layers and top with white sauce  sprinkling with cheese lots of cheese you love cheese
Add caption
cook in oven for around 30 mins then sprinkle with parsley go on you know you want too

serve with Salad , yes Stewie salad! and ok chips as well
