SWEET AND SOUR CHICKEN

So Stewie you and your friends fancy a Chinese meal but budget is tight and there is beer to buy 

This is a compromise , its one of the few occasions I say buy the Sweet n Sour sauce but it has to be Sharwoods the one with no bits we have tried others but that just dont cut muster
So to the batter, your dad is best at this but basically mix together flour water splash of vinegar and a pinch of turmeric to give a golden colour



The secret is to keep it really thick then simply dip your chicken strips into the batter and deep fry. It is really important that you do not use the basket in the fryer when you do his all they will stick you almost have to dip the first part in for a few seconds before letting go

now just serve with rice , remember to put it in a wee mould to tip out to make it look nice now even your dad who "does not do poncy" does this

heat your sauce up in the microwave and spoon over cooked chicken

you can use this batter for fish and spam too

PITA BREAD PIZZA

These Stewie are a doddle no real cooking involved , just use what ever you have left over I even made you a Christmas one with leftover stuffing chipolatoes and roast potatoespread tomato sauce onto pita bread
  1. top with whatever you have
  2. grill for about 6 mins till cheese melts
  3. serve with salad lol that is a wee joke for you maybe by now you will actually be eating salad :)

MICROWAVE CHOCOLATE CAKE










I made this cake one Saturday afternoon I thought this could be a big fail but you and your dad loved it


100g SR flour
100g Marg
100g sugar
25g hot chocolate powder
25g broken up chocolate


Mix the sugar, butter, flour, eggs, and coco powder together until creamy, then spoon into a medium microwave-proof baking dish. Microwave on High for 3 mins, turning halfway through cooking, until risen and set all the way through. Leave to stand for 1 min


looks a bit strange but its ok 
now just melt some more chocolate and pour over and decorate as you please or budget allows

BBQ CHICKEN






the Ingredients


Well Stewie this is one of the easiest and cheapest you can use chicken thighs which are half the price of breasts and in many ways thighs have more taste I could make a joke here about thighs or breast but I can just here you shouting NO MUM so I wont :)

you can use supermarket own brand sauces for this the ones in the picture only cost 25p for each bottle also you can use honey instead of brown sugar and you can add a splash of wine if you have some but its not essential 

METHOD

Cut out the bone and pull of the skin it easy if you use scissors


now add to mixed up sauce

Marinate for as long as you can overnight is good but you can also cook almost straight away
put chicken on to tinfoil and pour over any sauce left in dish
grill for 10mins each side or less if they are thin
turn halfway through and keep basting
if the filling starts to burn just change on to clean sheet

this can be eaten hot or cold we also used to have it with your favourite CHEESE on it

CHILLI CON CARNE




Another really easy one to make that is super cheap and usefully lasts 2 meals

INGREDIENTS
  • MINCE 
  • CARROTS
  • ONIONS
  • GARLIC
  • MUSHROOMS
  • CHILLIES
  • TIN TOMATOES
  • RED WINE
  • CUMIN POWDER
  • CHILLI POWDER
  • KIDNEY BEANS 
Fry off mince then add all the other ingredients apart from kidney beans the amount of spice will be dependant on who you are making it for , dad is a whooss who likes it mild, bless

Cumin is not hot but adds that authentic flavour I usually add at least a heaped teaspoon

Fresh chillis vary but the larger the more mild they usually are 

add some water or stock the mix at the start should be quite runny then cook for about 1 hour on low heat or till liquid has reduced it could be ready in half an hour if you need it quickly

serve with rice or pita bread

HOMEMADE CHILLI BURGERS




Homemade burgers Stewie are an essential you dont want to know what's in cheap frozen ones

Ingredients


MINCE 
COOKED ONION
GARLIC
BREADCRUMBS
PARMIGIANA 
EGG
CHILLI SAUCE OR CHILLIS
SPLASH SOYA SAUCE
PARSLEY

  1. mix all the ingredients together really squash and squeeze between your hands
  2. shape into burger shapes I usually make them about 5 oz
  3. make them slightly bigger than the roll you plan to use as they shrink when cooked so dont make them small and thick!!!
you can grill or fry then top with your favourite cheese till that melts put on roll with more chilli relish and enjoy

TIP: you can also put cheese in the middle as a surprise

BEST EVER PIZZA

BEFORE IT GOES IN OVEN


Well Stewie now we come to your favourite PIZZA and yes you can buy quite good ones in Aldi but nothing like this this is Student dinner party food

First thing to do is the tomato sauce you can just use pasatta but if you have time put pattasa celery onion mushrooms wine and garlic mixed herbs in a jug in the microwave and cook on high for 4 mins blitz with hand blender then return to micro and simmer for 5 add salt pepper to taste this has to cool down now any left over can be used  for pasta

now make up your base use a packet mix 

treat that dough mean knead for as long as packet says now roll out your dough and put on a backing sheet this has to be left to rise in a warm place 

What I do stewie is fill a bowl with boiling water and put tray on top with a poly bag over it

when it has risen nicely put on pizza ingredients sauce first then what ever you like an example is in the pic above but you could do a breakfast one with sausage black pudding fruit pudding too

place in oven and cook for about 20 25 mins gain make sure oven is hot
