SIMPLEST EVER CHEESY PASTA

So here we have one you made earlier an actual picture of one you made Stewie your first ever food picture , how proud was I , but next year your own cheese sauce I hope

cheesy pasta

1 tub cheese sauce
1 cup raw pasta
pepparoni
parma ham/cold meat
cheese

 put pan of water on to boil
 when boiling add pasta
 cook for prox 10 mis
 drain into sive
 add tub of cheese sauce to pan
 heat through sir with wooden spoon 4 mins
 add cooked pasta and stir
 then add bits and bobs ie 5 bits of pepparoni and some slice of parma ham
 stir in
 pour out on to plate and top with some grated cheese

would love if you sprinkled with parsley :) 

you could also add cooked chicken turkey ect what ever is left over any left overs can be put in a dish for next day and heated up in the microwave

Simple Bolognaise




MOST SIMPLE BOLOGNAISE EVER
So you asked me for a step by step no step missed out recipe so this is one  with no veg at all hopefully soon you will want to add mushrooms onions and carrots
INGREDIENTS
1 pkt mince
i carton of pasata or jar cook in sauce
squeeze of garlic puree if you have it
METHOD
 get pot out of cupboard
 put on to hob and turn heat to maximum for 2 mins
 Sqeezze two big squirts of garlic puree into a pan
 stir round for 30 seconds and add mince
 break down with wooden spoon and stir till brown about 3 to 4 mins

********You can add other veg at this stage 
 now add in pasata or jar of sauce
 if using pasata you may need to add some water if jar you wont
 it should be liquidly
 you than turn down heat to middle heat and bubble to reduce liquid
 this will take about 30 mins keep an eye on it stirring every now and again you may even want to turn heat down lower near the end
 you can cook this earlier in the day then reheat in microwave for 3 - 4 mins
 and add to pasta you have cooked 10 mins
 next day you could have with rice add some chilli sauce to spice up


you can also add some chopped onion and mushroom  carrot when browning the mince or even some frozen mixed veg

Cheesy Feast

Place all your ingredients on top of a flat-bread we used good old tomato sauce for this one with chillli cheese and pepperoni but you ca use just about anything ham and cheese would be nice or again left over chilli or some cooked chicken the cheese brings it all together and we know how much you like cheese
pop another flat bread on top and cook in the oven for 10 mins or so till all melty you van also do in a frying pan turning over half way through  


cut into quarters and enjoy 

BAKED POTATO


This may be one of the most important posts in your early student life potatoes are cheap and can be cooked in the microwave very quickly my HANDY HINT for these is to make sure you stab them and always turn over when cooking the time will depend on your microwave but start with 2 mins each side and continue till cooked to tell this you need to make sure a knife goes in easily

now you have a cooked potato what to fill it with ?



  • Beans and cheese heat the beans in a pot or in a covered micro dish add to potato then top with cheese
  • left over chilli or bolignaise as above heat in a pot or micro dish 
  • Curry you can use a jar and some cooked chicken to start with heat as above
  • smoked salmon if its your birthday :)
the pictures above at the moment are not mine I will change this as there is a distinct lack of parsley!!!!!!

Cheesy Eggy Dog Bread

Well Stewie keeping on the theme of doing recipes you might actually do rather than ones I want you to do
this one goes back many years we watched a children's cooking show and they called it eggy dog bread as they cut it in the shape of a dog kennel we wont bother with that, though feel free to cut into pretty shape


EGG
BREAD
CHEESE
OIL





















  • put frying pan on to heat with a little oil
  • Break egg into a bowl then whisk with a fork
  • add bread to mix and dip in both sides till bread absorbs the mix
  • now place bread in hot pan make sure pan its hot works better
  • cook both bits of bread 
  • then add cheese slice and put other slice of bread on top and cook for a min to melt cheese
  • if its a Saturday a parsley garnish is required :)

PIZZA OMELETTE







Have realized its getting nearer time you will actually might use this blogg when I started it it seemed so far away but now it draws nearer so I am starting to add to it again with an emphasis in easy peasy stuff

So Stewie it’s a quick snack your looking for cheap and cheerful well this is perfect

Ingredients


3 slice pepperoni
3 sliced mushrooms
Cheese !?! What ever you have mozzarella or cheddar or even cheese slices
2 eggs
Pinch mixed herbs
2 spoonfuls passata Or tomato sauce
Some chopped chilli optional
Basil or parsley optional










  1. So Stewart 1st thing to do is cook off the mushrooms they have a lot of water in them you don’t have to do this but it does help transfer to a plate
  2. Mix the 2 eggs together the pour into frying pan which you have lightly oiled I will make sure you have a really good non stick pan just don’t burn it I have never burnt a pan ;) 
  3. Draw your fork through the mixture to spread it out and cook till almost set
  4. Then transfer by sliding on to a bit of foil on grill pan
  5. Now make up the pizza ,tomato sauce first then all the other ingredients 
  6. Make it pretty please
  7. Grill till cheese is nice and melty
  8. cut in quarters like a pizza garnish please 
you can use this omelette base for lots of toppings another favorite is left over spaghetti bolognaise

Viennese Whirls / Custard Creams


Stewie you loved these again one to impress the girls as long as they are not dieting 


The chocolate version above just add some chocolate spread to the icing
you can of course miss out the strawberry garnish , do you remember that I gave you one that I had taken the strawberry off but yo could still tell , by the way girls love strawberries

Ingredients

For the filling
  • 100g/3½oz soft butter
  • 200g/7oz icing sugar, plus ½ tsp for dusting
  • ½ tsp pure vanilla extract
  • if my friend Jordan makes these here are some more hints
  • you can also add some custard powder or melted white chocolate to the icing about 2 tea spoons powder or around 25g of white choc
  • make sure you have the butter really soft before you add icing sugar its messy and you think its not going to work but it will be patient




  • Preparation method

    1. Preheat the oven to 190C/375F/Gas 5. Line a baking sheet with greaseproof paper.
    2. Put the butter, icing sugar, plain flour, cornflour and vanilla extract in a food processor and blend until smooth. You may need to scrape the mixture down a couple of times with a rubber spatula.again you think its not going to work but it will suddenly come together in a ball, its a good idea to chill it for 5 mins as well 
    3. roll into small balls and press down with a fork. or cut into shapes then chill for 5 mins whilst oven is heating
    4. Bake in the centre of the oven for 13-15 minutes or until pale golden-brown and firm. Cool on the baking tray for five minutes then transfer to a cooling rack. Repeat with the remaining dough to make 32-36 biscuits.
    5. For the filling, put the butter in a bowl and sift the icing sugar on top. Add the vanilla extract and beat with a wooden spoon or an electric whisk until very light and smooth. put the buttercream icing onto the remaining biscuits and sandwich  Put on a serving plate and dust with sifted icing sugar. Serve


      Remember you can cut into shapes to perhaps this one for valentines day same mix just cut into hearts then cut out smaller heart with red icing and then flick over white chocolate

Self Saucing Lemon Pudding

this was not actually one of your favourites as I quote you said"lemon is technically a fruit mum" and all who know you will understand this but it is so easy to make that I though I would include it, you did eat it all up by the way :)
INGREDIENTS



  • 50g butter
  • 200g caster sugar
  • lemon , zested
  • 100ml lemon juice (include the zest from the zested lemon)
  • eggs , separated
  • 50g plain flour , sifted
  • 250ml milk
  • icing sugar for dusting
METHOD

  1. Heat the oven to 180C/fan 160/gas gas 4. Whizz the butter, sugar and lemon zest until they are pale and creamy in a food processor. Add the lemon juice, egg yolks, flour and milk one by one until you have a smooth batter. Whisk the egg whites until firm but not stiff, and fold the two mixtures together.
  2. Pour into a buttered ovenproof soufflé or baking dish and put it in a baking tray half filled with hot water. Bake for 4O-45 minutes until the top is lightly browned and set and there is a sort of gooey lemon curd below. Remove the dish from the tray, dust with icing sugar and serve hot, with or without cream.Good cold too

PORK AND LEEK MEATBALLS IN CIDER MUSHROOM SAUCE


so money is tight your fed up with beef mince and tomato based sauce this is perfect
Ingredients for MEATBALLS

PKT PORK MINCE
1 COOKED LEEK
PARSLEY
1 0Z PARMIGIANA
2 SLICE BREAD MADE INTO CRUMBS
1 EGG
TABLE SPOON CRANBERRY SAUCE

Mix together and form into balls put in fridge to chill and firm up

Ingredients for sauce


glass of cider
3/4 tub crepe fraiche
some leek
2 garlic cloves
teaspoon grain mustard
8 mushroom


  • fry of mushrooms leek garlic in a little oil or butter
  • add creme fraiche and mustard
  • add some water or stock to loosen
  • then boil till thickens
  • finish with parsley
grill meatballs for 10 to 15 mins then add to sauce


cook gently for another 10 mins

serve with pasta some more parmigiana and a parsley sprinkle

PENKILIN PIES





You and your dad challenged  me to make a pie like the famous Pukka pies, you both gave me a ten out of ten for this. so in honour of the river we live on they are to be known as Penkilin Pies


1st marinate the meat in red wine


then drain off marinade into a glass and place meat in a bag with seasoned flour

Fry off meat and add other ingredients then top up with water till covers about an inch above meat it will look like too much water but dont worry it will reduce
cook slowly for at least 2 hours





roll out pastry and line moulds


 then add filling which has been cooled down this is important dont add hot filling then put pastry on top make sure you seal the edges together well use egg then brush pie with egg to make it look pretty once its cooked 

cook in oven for about 20 to 25 mins at 210
then take out of moulds no parsley garnish needed
